Livermore’s newest restaurant, Polo’s Corner, specializes in classic breakfast, lunch and dinner staples, from massive breakfast burritos to pasta pomodoro.
Eggs benedict? Check. Caesar salad? Yep. Rib-eye steak? Got that, too.
Chef-owner Angel Melendez spent 20 years cooking at The Club at Castlewood in Pleasanton before opening Polo’s Corner in the Portola Village Center.
In addition to country club staples, look for Melendez’s Mexican-inspired offerings, including the mouth-watering Tres Leches Brioche French Toast and another breakfast item, the Chilaquiles Rojo, two fried eggs slathered in a New Mexico pepper sauce, queso fresco and chorizo. His signature molcajete salsa graces the Ranchero omelet.
There are six sandwiches and six salads too, including a pear and prosciutto with arugula and a lemon vinaigrette.
